Breakfast is an important meal for Kapoor—even if she doesn't eat very much, she never skips it. Most mornings she keeps it simple with gluten-free toast, eggs, and iced coffee. "As soon as I wake up I need to eat, I don't do intermittent fasting, I basically don't fast," she says. "I wake up in the morning and I need to eat my toast, no matter what. And my cold coffee, I'm obsessed with my cold coffee!"

Kapoor follows a healthy vegetarian diet, preferring to cook for herself at home. "I don't believe in diets and cutting carbs and I don't enjoy eating out, it's something I just don't enjoy doing," she says. Her go-to lunches and dinners consist of bread, lentils, and spinach dishes. "One cup of spinach contains a form of Vitamin A, Vitamin C, Vitamin K, and folate, to name a few important vitamins," says Jacqueline Beatty, PhD, MS, RD. "Together, these vitamins help keep your body healthy and strong."

Kapoor likes to get her workouts out the way early in the day. "Morning is the best time for workouts," she says. "I wake up and I train [after breakfast]. That's the first thing I do. I do my weights with my coach, or I go for a yoga class, or I do cardio. I believe in working out and having a protein shake, no meal right after."

Kapoor is embracing her unique looks instead of trying to force herself into something she isn't. "The good thing is that now, people (including myself) aren't trying to conform to the stereotypical norms of beauty," she says. "People are owning who they are and what they find attractive. And I think it is perfectly okay to be who the hell you want to be—gain weight, lose weight, cut your hair, get fillers, do whatever it takes for you to feel more confident in your skin."

Kapoor has developed self-confidence over the years. "I think everyone should know they are beautiful," she says. "I was always a chubby kid, so having to deal with that as a teenager was a bit rough. And that extended well into my 20s, when I was training to be an actor. Constantly failing to reach my 'goal body weight' resulted in me developing issues with the way I saw myself. It's still a work in progress, but I keep reminding myself every day that I work out because I love my body, not hate it. Today, I eat healthy and train daily, and this lifestyle brings me true joy."
